This Honey Sweetened Whole Grain Carrot Cake is great by itself served for breakfast, or topped with Honey Sweetened Cream Cheese Frosting for dessert. This isn’t your ordinary carrot cake loaded with tons of white sugar. This version truly highlights the flavor of the carrot and its natural sweetness.Ingredients For Honey Sweetened Carrot Cake1/4 cup plus 2 tablespoons of coconut oil1/4 cup of honey2 tablespoons of freshly squeezed orange juice2 eggs1 tablespoon of vanilla3 ounces of whole wheat flour, by weight3 ounces of whole grain oat flour, by weight1 teaspoon of baking soda1/2 teaspoon of aluminum free baking powder1/2 teaspoon of sea salt2 teaspoons of cinnamon1 tonka bean, ground (this spice can be hard to find- skip it if you don’t have one)1 1/2 cups of shredded carrots (use your food processor shredding disc)1/4 cup of chopped walnutsDirectionsHeat your oven to 350 degrees F. Grease an 8 x 8 baking dish and set aside.You want your coconut oil to be in a liquid form for this recipe. That happens at 76 degrees F. If your oil is not warm enough to be liquid, heat it until it is. Be careful not to let it get hot, as it will prematurely cook the eggs in the next step.Put the coconut oil, honey, orange juice, eggs and vanilla extract into the work bowl of your favorite food processor fitted with a multipurpose blade. Process for two minutes.Meanwhile, combine the whole wheat flour, whole grain oat flour, baking soda, baking powder, salt, cinnamon and tonka bean in a large bowl. Whisk to combine well. Add the shredded carrots and walnuts. Stir well.Add the wet mixture to the dry mixture and stir until just barely combined. Too much stirring will result in a tough carrot cake. Transfer to the greased baking dish. Bake until a toothpick inserted in the center comes out clean, about 35 to 45 minutes.Ingredients for Honey Sweetened Cream Cheese Frosting8 ounces of cream cheese, at room temperature1/4 cup of coconut oil, at room temperature2 tablespoons of honeyDirectionsBeat all three ingredients together until well creamed. You can do this with a stand mixer, hand mixer or with a wooden spoon. I wouldn’t recommend the last one unless you are using it as part of your exercise program!

If you are from Minnesota, North, or South Dakota, the title says it all. If you are from anywhere else in the United States, this is a casserole. Whoever invented this particular dish is to be commended, since it is one of the tastiest and most beloved hotdishes in the Midwest. It is a really good comfort food, and as is usually the case with such dishes, tastes just as good if not better when reheated. This is one casserole that little kids seem to enjoy just as much as the adults do.Aside from the name, there are a few other differences between a casserole and a hotdish. While the hotdish generally uses some cream-based soup as a binder, the casserole uses pasta or flour. Both have a crunchy topping, and both contain meat of some sort, and vegetables. The casserole uses a much wider variety of meat, while the hotdish almost inevitably contains hamburger. Both are cooked uncovered.Highly Addictive Tater Tot HotdishThis tater tot hotdish recipe is anything but bland. Because the primary ingredients can be quite bland, this recipe relies on several unusual ingredients to jazz things up. As always, the cook should make their own changes based on personal preferences.What You Will Need:2 pounds ground round

2 cans cream of mushroom soup

1 bag frozen mixed vegetables

1 bag tater tots, thawed

Worcestershire sauce

Soy sauce

Minced garlic

Red pepper or red sauce

Chopped onion (can be bought frozen, use as much as desired)

You will also need a large skillet for browning the meat, and an oversized baking pan (13 x 9 has a tendency to not be big enough, so use either the next size up or a high-sided 13 x 9 pan).How To Make It:Preheat the oven to 350°.Start grounding the hamburger, adding the sauces, garlic, and onion to taste. This will give the hamburger a very robust flavor, which will help alleviate blandness. You may also add those sauces to the cream of mushroom soup. Do not salt, because cream of mushroom soup is very high in sodium, as is the soy sauce.Drain the hamburger completely, and place it in a very large bowl. Add the soup and mixed vegetables. Stir thoroughly, and place in the greased (or sprayed) pan. Completely cover the mixture with tater tots, and bake for one hour.Cheeseburger Tater Tot HotdishBefore removing from oven, cover hotdish with 12-16 ounces of shredded cheese. Close oven door and let sit until cheese melts, roughly 5 minutes (keep a close eye on it).Remove from oven and let set for 5-10 minutes.Side DishesSome welcome accompaniments to tater tot hot dish would be a simple garden salad, warm bread sticks, or even a fruit salad.

How to Make Soft Gluten Free Cookies

If you’re unable to eat wheat or gluten it can be really hard to get your perfect cookie fix. Fortunately I have a great recipe which will allow you to bake soft gluten free cookies; they are so good they taste just like the real thing.You will need:

• 400g of plain gluten free flour

• 200g of butter softened

• 200g of light brown sugar

• 125g of caster sugar

• 1 large egg, whisked with a tsp of vanilla extract

• 1tsp of bicarbonate of soda

• 1 and 1/2 tsp of baking powder

• 250g of chocolate chopped into small chunksFirst off, you want to start with creaming the butter and sugar together until smooth. Then add the egg mixture with a tablespoon of flour and mix well. You then want to add the rest of flour, bicarbonate of soda, baking powder and chocolate, I find it easier to use my hands to mix the mixture together at this point as the cookie dough is quite dry, but you can use a wooden spoon if you prefer. Once this is done, chill the cookie dough for two hours to allow the flavours to intensify.When the two hours are up, preheat the oven to 180 degrees Celsius and roll the cookie dough into balls about the size of a golf ball. You should have around 22-25 cookies balls to bake. Then space the cookie balls on a baking tray lined with baking parchment, the balls need to be quite far apart as the cookies will spread. You will probably need to bake the cookies in batches if you only have small baking trays.Then bake the cookies for 12 minutes, upon removal from the oven press them gently, if they retain their shape then they are done, if they collapse then return to the oven for another minute to regain their shape and then check again. Once the cookies are done transfer to a wire rack too cool a little and then tuck in while they are still warm!

Check the labels of everything you use to make sure that all no gluten will sneak its way into your cookies!

Easy Indian Cauliflower Recipe That My Kids Actually Love

One of the most difficult parts of being a parent is getting your kids to eat their vegetables. Often I do this by disguising them in a soup or pasta sauce. Sometimes, a vegetable recipe just clicks and they love it. This Indian cauliflower recipe is one of those recipes. It can be eaten as a side dish or even a main meal.Growing up in the US, cauliflower was one of those vegetables I just plain would not eat. In the UK, however, kids are brought up loving one of the UK’s signature dished ‘cauliflower cheese.’ This is very similar to macaroni and cheese but with cauliflower instead of pasta.As I now live in the UK, my kids were very happy to give this Indian cauliflower recipe a try.I first experimented with a similar recipe while on holiday in Italy. The Italians have a dish that is shallow fried in the same way but uses olive oil, garlic and a few anchovy fillets. I loved it so much I decided to see if the Indians had a similar dish.They do! In fact I have seen similar recipes to this Indian cauliflower recipe in quite a few Indian cookery books.This is an easy recipe. You can fry it an hour or two before serving and then just heat it up again without losing any flavour.So let’s get started.Serves 4Preparation time: 10 minutes

Cooking time: 15 minutesINGREDIENTSOne large head of Cauliflower cut into one inch cubes1/4 cup vegetable oil – Give or take a bit – this isn’t rocket science

1 Tablespoon black mustard seeds

10 fresh curry leaves (optional)

1 Tablespoon fennel seeds

3 cloves garlic smashed and finely cut

1/2 teaspoon turmeric

A pinch of red chilli powder

1 Tablespoon saltPour the oil into a pan over medium heat. Throw in the mustard seeds, curry leaves and fennel seeds. The mustard seeds will begin to pop.When they do, add the cauliflower and move it all around in the pan for a few minutes.Now add the garlic and fry for a further couple of minutes.The cauliflower will begin to cook through. You want the florets to be cooked through but still have a bit of resistance. Some of the smaller pieces will become nice and crispy.At the end of cooking, add your turmeric, chilli powder and salt.Did you notice how I said ‘a pinch of chilli powder?’ Some people like things hot. Unusual Vegetables Celebrating Spring

Spring brings lots of unusual things to the farmer’s markets. Who ever thought of purple asparagus? Asparagus is supposed to be green. The purple variety does have a slightly different flavor and can really dress up a plate. White acorn and pattipan squash, along with white pumpkins, are more of the new verities available. Everyone knows these are not supposed to be white. The delicacy of the white squash is lovely, and it can be an excellent way to get finicky kids to eat their veggies.Then there are the OTHERS. The things no one can quite identify, but you know they have to be edible because they came in on the wagon with the rest of the vegetables. Things like Kohlrabi, that resembles something out of a science fiction movie, and Celeriac, or celery root, that looks sort of like Kohlrabi crossed with a rock. These taste delicious when fixed properly.Kohlrabi is a member of the cabbage family. The edible bulb is actually a swollen stem. Preparation is simple.Preheat the oven to 400 F.Wash and pare several small Kohlrabi. These come in both green and purple. You can get some of each, just for appearance. If the Kohlrabi are small and tender, there may be no need to peel the skin.Cut the vegetables in half, then into even ¼ to ½ inch slices. Toss with a little extra virgin olive oil, sprinkle with some freshly ground sea salt. Arrange on a baking sheet, and put in the oven. Check them every seven to ten minutes. They will become soft at first, and then will begin to brown around the edges. As soon as they begin to brown, take them out of the oven.Celeriac is another matter all together. It can be roasted, the same as asparagus or kohlrabi. But then you pretty much just have roasted celery tasting stuff. Instead, what about Celeriac Au Gratin?Wash and peel one medium size celery root. Cut into ¼ inch pieces.Wash and slice [unpeeled] three large russet potatoes.Layer these vegetables alternately in a large dutch ovenPour just enough milk over the top to cover.Making sure to keep the heat to medium, bring the pot to a slow boil. Once the vegetables are fork tender, turn off the heat. Add some salt to taste and a good pinch of nutmeg.Spread eight ounces of shredded cheese over the top. (Cheddar works well)Bake at 400° F for about 40 minutes, or until the liquid has thickened and the cheese is browned and bubbly.
