Monday Night Risotto A Recipe to Use Up That Cold Roast Chicken

If you hate wasting food and struggle to think of easy new recipes, my Monday Night Risotto might be just the thing. It’s really easy, really tasty, takes about 25 minutes to make and uses up all the cold chicken left over from your Sunday Roast. I usually serve 3, but you can serve as many as you want. Just add more or less rice and stock.Here’s what you needOne Medium Sized OnionA knob of butter and a dash of Olive oil½ a cup of risotto rice per personAbout ½ a pint of hot chicken or vegetable stock per personA small glass of dry white wineWhatever left-over cooked chicken you haveA good spoonful of Green PestoA good grating of Parmesan cheeseSome frozen peas (if you like)This is ‘playing it by ear’ kind of cooking. The quantities really don’t need to be exact, and you can leave some out or add something else in, if you prefer. As long as you have the onion, rice and stock it’ll work.This is how you do itTake all the cold meat you stripped off yesterday’s chicken and cut it into small pieces. Finely chop your onion, and put the kettle on to boil. Then gently heat a knob of butter and a splash of olive oil in a large, non stick frying pan and add the onion. Just soften it for about 5 minutes. Be careful the butter doesn’t burn.While that’s happening, make up your stock with your boiling water and stock cubes. I use a mixture of vegetable stock cubes and chicken stock cubes, but either will do. Add the rice to the onion in the frying pan (make sure it’s risotto rice) and stir for a minute or two, until it’s well coated with the oil and butter.Turn up the heat a little, and pour in your glass of white wine (a splash of wine vinegar works just as well). Once it’s evaporated stir in about a ladle full of hot stock. The chicken has to be really well heated through by the end of the cooking time, so add it now as well.Keep adding the stock a little at a time. The rice will soak it up while it cooks, but the trick is to keep stirring and let the rice soak up the stock before you add any more. Don’t feel you have to use exactly all the stock. The main thing is to avoid the risotto being too wet. I find a pint and a half is more than enough for three, but if you run out you can always just add a little hot water or more wine.The rice will be cooked in about 18-20 minutes. Don’t overcook it. It should be soft and creamy but still just a tiny bit firm in the centre, and the grains should be separate not stuck together. Taste a bit to check that it’s firm but not too hard, and if it’s ok turn off the heat and stir in a generous teaspoon or two of green pesto. Grate some Parmesan on top for flavour, and stir that in. Cover for two minutes and serve.If you fancy some frozen peas, you can just throw them in about 10 minutes before the end. I like to add them but my son hates them, so I usually cook some separately and just stir them into mine.Buon Appetito!

1 8-ounce package cream cheese, softened
3 tablespoons mayonnaise
1 tablespoon lemon juice
½ teaspoon salt
¼ teaspoon ground ginger
1/8 teaspoon pepper
4 drops hot sauce
2 cups diced cooked chicken
2 hard-cooked eggs, diced
¼ cup diced green onions
3 tablespoons chopped green pepper
Green pepper strips
2 tablespoons sesame seeds, toasted
3 tablespoons chopped black olives
3 tablespoons chopped sweet red pepper
5 slices cucumber, halved
Parsley sprigs
How To Make It:Combine cream cheese, mayonnaise, lemon juice, salt, ground ginger, pepper, and hot sauce in a large bowl. Beat at medium speed with an electric mixer until smooth. Add chicken, eggs, green onions and chopped green pepper and stir well.Line a 1-quart bowl or mold with plastic wrap. Spoon mixture into bowl; press firmly with the back of a spoon. Cover and chill at least 4 hours.Invert bowl onto serving platter. Remove bowl, and peel off plastic wrap. Garnish mound with green pepper strips, sesame seeds, black olives, and sweet red pepper.Arrange cucumber slices and parsley sprigs around bottom of mound.Serve as desired.Smoked Whitefish SpreadThis recipe makes 2 1/3 cups of spread. If you would like, any smoked white-fleshed fish can be substituted for whitefish. You also can use mayonnaise instead of sour cream if you do not have sour cream on hand. This spread goes great accompanied with rye bread slices or crackers.What You Need:
1 8-ounce package cream cheese, softened

½ pound smoked whitefish, skinned, boned and flaked
¼ cup finely chopped red or green pepper
2 tablespoons finely chopped red onion

2 ½ cups flour

¼ cup cold waterHow to Make ItUsing a large saucepan or skillet you will add the vegetable oil to heat over a medium heat. Add the minced onion and cook until the onion is translucent in color. Add the hamburger or ground beef while crumbling it up while using a fork.Stir in the chopped tomatoes, salt, garlic powder, dry mustard, and hot pepper sauce. Cook for about 5 minutes and then stir in 1 beaten egg. Stir continually while cooking for about 2 minutes more. Remove from heat and set aside to cool until needed.Preheat the oven to 450 degrees Fahrenheit.Prepare a large baking sheet by lightly coating it with cooking spray. Set aside until needed.Using a medium size mixing bowl you will add the flour and then cut it into the butter or margarine. Stir in the remaining beaten egg. Mix thoroughly to combine. Form the dough into a ball and then using a rolling pin you will roll the dough out to a thickness of about 1/16 inch. Cut the rolled dough into 2 ½ inch rounds while using a biscuit cutter, cookie cutter or even a butter knife.Spoon about 1 teaspoon of the spicy filling into the middle of each round of pastry. Fold the pastry in half and then seal the edges by crimping them with your fingers or while using a fork. Prick the tops to make tiny holes and then arrange the pieces on the prepared baking sheet. Place in the preheated oven to bake for about 12 minutes or until done.

Cover them with a damp towel or with plastic wrap. Heat an ungreased griddle or pan. Put a masa ball between two sheets of plastic on a tortilla press and press down to make a tortilla. Take the top sheet of plastic off and turn the tortilla on to the griddle or pan.Peel the other sheet of plastic off and top it with some of the fish filling mixture. You can also add an epazote leaf at this point, if you want, although that is an optional ingredient.Fold the dough in half to cover the fish mixture and press the dough edges together. Cook the quesadilla until there are brown spots on the underside. This will take three or four minutes. Flip it over and cook the other side. Repeat these steps with the remaining quesadillas and serve them hot or warm.You will find that kids love these as much as the adults do. This chicken recipe is well known in the Yucatan area of Mexico and if you have taken a vacation in the Yucatan you might have tasted it before. The recipe is quite simple and you need to marinate the chicken in the garlic and chili-infused bitter orange juice and then wrap it in a banana leaf with tomatoes, onions, and epazote for baking and steaming. If you cannot get bitter orange, you can use equal parts of fresh orange juice and lemon juice instead.What Is Epazote?Epazote, which is also knows as pigweed, wormseed, Mexican tea, hedge mustard, Jerusalem parsley, pazote and West Indian goosefoot, is a strong-flavored herb and it adds a great flavor to pollo pibil. It has featured in a number of recipes throughout Mexican food history and it dates back to the Aztec times. The Aztecs used it for both cooking and medical purposes.This herb is poisonous in large quantities but it is beneficial in small quantities because it helps to relieve the gassiness you can get from eating beans. A lot of famous Mexican recipes contain beans. It is often added to animal feed because it helps to prevent worms.Epazote has a distinctive flavor which has been likened to perfume or gasoline. 2 small banana leaves or 1 big one
1 sliced yellow onion
8 pieces chicken
4 sliced tomatoes
Juice from 4 bitter oranges
2 tablespoons red chili paste
1/2 cup butter
3 garlic cloves
1/2 teaspoon salt
1 epazote sprig
Fresh chopped onion, tomatoes, and chilies, to serve
How To Make It:Combine the orange juice, salt, garlic and chili paste. Marinate the poultry in this mixture for two hours, piercing it with a fork beforehand so the marinade can really sink in and make the meat moist.Preheat the oven to 350 degrees F. Arrange the chicken on the banana leaf and top it with the onions, tomatoes, and epazote. Dot the butter on top, then wrap the banana leaf over the chicken and tuck it underneath so it stays closed. Alternatively you can use oven-safe string to tie it up.Put the wrapped poultry on the uppermost rack in the oven over a big oven-safe bowl half-filled with water. Let the chicken steam for an hour or an hour and a half, depending how big the chicken pieces are. Take the chicken out of the leaf and serve it with fresh onion, tomato, and chilies.
